Doing Something About It

I decided it's time to go back to WW...
Which works out nice since my sweet friend Tara decided the exact same thing.
Oh, AND my work is going to have weekly meetings on site which is totally amazing as I'll happily take all the support I can get!
The whole system really clicks with me, and it felt so nice to feel like I'm headed in the right direction. 
In an effort to prepare for a week full of fruits and veggies - the roomie and I headed to Costco...OH.MY.GOSH! They had a HUGE selection of fruits and veggies for super reasonable prices. I felt crazy but couldn't help shouting out prices and gawking at how delicious each fruit and vegetable looked.
Once we got home it was my night to cook so I whipped up a delicious dinner for only 9 points+ (of course I found it on Pinterest)

Skinny Chicken & Broccoli Alfredo

(Serves 4 - 9 Points+ per serving)

Ingredients:

2 chicken breasts, seasoned with salt & pepper then cooked and cut into bite-sized pieces
2 cups cooked broccoli
8oz rotini
2 Tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 Tablespoons flour
1 cup chicken broth
1/4 cup milk (any kind, I used 1%)
1/4 cup plain Greek yogurt
salt & pepper
3/4 cup grated Parmesan cheese

Directions:
1. Cook pasta according to package directions, reserving 1/2 cup pasta cooking water before draining. Set aside.

2. Heat extra virgin olive oil in a medium-sized skillet over medium heat. Add garlic and cook, stirring constantly, until golden brown, about 1 minute. Sprinkle in flour then whisk to incorporate and cook for 1 additional minute.

3. Slowly whisk in chicken broth, then milk. Whisk in Greek yogurt, salt and pepper, then turn the heat down to low and let the mixture simmer until thickened, about 2-3 minutes. Turn the heat off then stir in Parmesan cheese, then chicken. Pour over cooked pasta then add broccoli and stir well. Add a little reserved pasta cooking water if sauce is too thick. Serve.

I highly suggest this pasta - you can't tell a difference in the Alfredo Sauce - it's tasty!
